SWEET AND SPICY CHICKEN SALAD

                         

 

2 HALVES OF A CHICKEN BREAST (1 whole breast marinated in a southwest dressing)

1 SMALL CAN CRUSHED AND DRAINED PINEAPPLE

RED SEEDLESS GRAPES HALVED OR QUARTERED (about 20 to 25 of them)

1 SHALLOT, CHOPPED

½ CUP TOASTED PECANS, CHOPPED

2 to 3 TABLESPOONS FRESH CILANTRO, CHOPPED

 

Sweet and Spicy Chicken Salad

 

DRESSING:

½ CUP MAYONNAISE

3 TABLESPOONS DRIED RANCH DRESSING MIX

JUICE OF ONE LIME

½ TEASPOON OF MRS. DASH’S SOUTHWEST CHIPOTLE SALT-FREE SPICE (or to taste)

SALT AND PEPPER TO TASTE

 

GRILL OR ROAST MARINATED CHICKEN BREAST PIECES AND LET COOL. DRAIN CRUSHED PINEAPPLE AND SQUEEZE OUT REMAINING JUICE. SLICE GRAPES IN HALVES OR QUARTERS. CHOP ONE SHALLOT. TOAST PECANS IN OVEN AND CHOP. CHOP FRESH CILANTRO AND COMBINE ALL INGREDIENTS. SALT AND PEPPER TO TASTE.

 

COMBINE ALL DRESSING INGREDIENTS AND POUR OVER CHICKEN MIXTURE AND STIR. PLACE IN REFRIGERATOR TO CHILL. I SERVED WITH STEAMED ASPARAGUS, SLICED TOMATOES, AND AVOCADO. PERFECT MEAL FOR A FAMILY ON THE GO…A MUST DO RECIPE FOR THOSE SOON COMING LAZY, HAZY DAYS OF SUMMER!
